1) Slice large jacket potatos thinly without completing the cut so the potato remains intact (google: hedgehog potatos)
2) Drizzle with olive oil and cook for 40 mins @ 180 (or until cooked)
3) Take from the oven and sprinkle Rub Down all over dem tatties
4) Bake for another 15 mins and remove
5) Aplly lashings of soured cream and spring onion
